The Larmuseau snowballs have been an authentic Ghent speciality for over a hundred years. Today, they are care- fully crafted by Tanguy Serraes, a young foodie. He rolls the snowballs - which are made using a traditional recipe - in his confectionary on Eilanderskaai. The perfect snow- ball cracks when you bite it, and melts on your tongue like snow in the sun. This vanilla cloud, coated in a paper-thin layer of dark Belgian chocolate and sprinkled with pow- dered sugar, is a fresh, traditionally made product that is only available from September to March.
